Having a go at the luminous
whole broiled
catfish at Favori is like exploring a jagged
continent of wildly diverse terrain: Wrap the succulent,
most fish among peanuts and mint and dip it in fish sauce
and you have a nutty, salty combination shadowed with
pepper; pick at it from the blackened edges and you are
tasting charred sweetness; have a go at the skin and it's
crunchy with hints of honey...
